Juicy and flavorful with a sweet-savory Korean BBQ glaze, these meatballs are a crowd favorite. Served with a spicy mayo dip, they’re perfect for parties, meal prep, or a fun twist on dinner.
Ingredients
1 lb ground beef and/or pork (80/20 preferred)
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 green onions, finely chopped
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp brown sugar
1 tbsp gochujang (Korean chili paste)
Sesame seeds and chopped chives for garnish
Spicy Mayo Dip:
1/2 cup mayonnaise
1 tbsp sriracha or more gochujang
1 tsp rice vinegar
Pinch of salt
Instructions
- In a large bowl, mix together ground meat, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, sesame oil, brown sugar, and gochujang.
- Shape the mixture into golf ball-sized meatballs and place on a parchment-lined tray. Chill for 20–30 minutes.
- Cook in a skillet over medium heat with oil until browned on all sides and cooked through (8–10 minutes), or bake at 400°F for 15–20 minutes.
- Whisk together the mayo, sriracha/gochujang, rice vinegar, and salt to make the spicy dip.
- Drizzle sauce over meatballs or serve as a side. Garnish with sesame seeds and chives.
