1 pound ground beef
1 cup yellow corn kernels
1 cup canned black beans, drained and rinsed

2 tablespoons taco seasoning
1 cup diced tomatoes (with green chiles optional)
1 ½ cups shredded cheddar cheese
1 box cornbread mix (prepare according to box)
½ cup sour cream (for garnish)
¼ cup chopped green onions (for garnish)
Instructions
1. In a cast iron skillet over medium heat, cook the ground beef until browned. Drain excess fat.
2. Add chopped onion and garlic to the skillet. Sauté until fragrant, about 3 minutes.
3. Stir in taco seasoning, corn, beans, and diced tomatoes. Simmer for 5 minutes to combine flavors.
4. Sprinkle shredded cheddar cheese evenly over the hot beef mixture.
5. Prepare the cornbread mix according to package instructions. Pour batter over the beef and cheese layer and spread evenly.
6. Transfer skillet to a preheated oven at 400°F (200°C). Bake for 20-25 minutes, or until the cornbread topping is golden and cooked through.
7. Let cool slightly, then garnish with sour cream and chopped green onions before serving.
Notes
A 10-12 inch cast iron skillet gives the best crisp and even bake.
You can use ground turkey or plant-based meat for variations.
For extra spice, stir in chopped jalapeños or a dash of hot sauce to the filling.
