Description

These easy strawberry brownies are rich, fudgy, fruity, and perfect when you need an easy recipe that feels special without much work. Ingredients

1 box strawberry cake mix

2 large eggs

1/3 cup vegetable oil

1 teaspoon vanilla extract

3/4 cup white chocolate chips

1 cup fresh strawberries, diced

1 tablespoon coarse sugar or powdered sugar, optional


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.

2. In a medium bowl, mix the strawberry cake mix, eggs, vegetable oil, and vanilla extract until a thick batter forms.

3. Fold in the white chocolate chips and diced strawberries gently.

4. Spread the batter evenly into the prepared pan and smooth the top.

5. Sprinkle coarse sugar on top if using.

6. Bake for 25 to 30 minutes, until the edges are set and the center is just cooked through.

7. Cool in the pan for 20 minutes, then lift out and cool completely before slicing into squares.

Notes

Pat the diced strawberries dry so the brownies do not get too wet.

Do not overbake or the brownies can lose their fudgy texture.

Chill the brownies for cleaner slices and an even denser texture.
