Ingredients
9 oz cheese tortellini
12 oz smoked sausage, sliced
1 tablespoon olive oil
2 tablespoons butter
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2 cloves garlic, minced
1 1/4 cups heavy cream
1 cup freshly grated Parmesan cheese
1 tablespoon Cajun seasoning (adjust to taste)
Salt, to taste
Black pepper, to taste
Instructions
1. Boil a large pot of salted water. Cook tortellini according to package instructions until just al dente. Drain and set aside.
2. In a large skillet over medium heat, add olive oil and butter. Once melted, add sliced sausage and cook until browned.
3. Add chopped red and yellow bell peppers and minced garlic. Sauté until the peppers soften and garlic is fragrant, about 3-4 minutes.
4. Lower the heat and pour in heavy cream. Stir in Cajun seasoning, salt, and pepper. Let it simmer gently for 4-5 minutes to thicken slightly.
5. Add Parmesan cheese and stir until melted into the sauce.
6. Return tortellini to the skillet and gently fold to coat all pasta in the sauce. Let it simmer for 2-3 minutes.
7. Serve hot, optionally garnished with more Parmesan and fresh parsley.
