Ingredients
1 9-inch pie crust, pre-baked
1 tablespoon olive oil
5 cups fresh spinach (or 10 oz frozen, thawed and drained)
1 cup ricotta cheese (full-fat recommended)
3 large eggs
1/2 cup milk or cream
1/3 cup grated Parmesan cheese
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- If using fresh spinach, sauté in olive oil until wilted, then cool and squeeze out excess moisture.
- In a large bowl, whisk together ricotta, eggs, milk or cream, Parmesan, nutmeg, salt, and pepper until smooth.
- Stir in the spinach until evenly distributed.
- Pour the mixture into the pre-baked crust and smooth the top.
- Bake for 35–40 minutes, or until the center is set and lightly golden.
- Let cool at least 10 minutes before slicing and serving.
