Ingredients
1 tablespoon olive oil
1 lb Italian sausage (mild or hot)
1 small onion, diced
3 cloves garlic, minced
1 (28-ounce) can crushed tomatoes
6 cups chicken broth
1 (20-ounce) package cheese tortellini (refrigerated or frozen)
4 cups fresh spinach
1 teaspoon Italian seasoning
Salt and pepper to taste
Freshly grated Parmesan cheese, for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add diced onion and minced garlic. Sauté until onions are soft, about 3-4 minutes.
- Pour in crushed tomatoes and chicken broth. Stir in Italian seasoning, salt, and pepper.
- Bring to a simmer, then add tortellini. Cook according to package directions, usually 7-10 minutes.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Serve hot with grated Parmesan cheese on top.
