Description

Ingredients

10 oz frozen chopped spinach, thawed and drained

3 large eggs

1 cup cottage cheese

1 ½ cups shredded cheddar cheese

¼ cup all-purpose flour

¼ cup melted butter

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.

2. Thoroughly drain the thawed spinach using a towel or cheesecloth to remove excess moisture.

3. In a large mixing bowl, beat the eggs. Add the cottage cheese, cheddar, flour, and melted butter. Stir until combined.

4. Fold in the spinach. Season the mixture with salt and pepper.

5. Pour into the prepared casserole dish and spread evenly with a spatula.

6. Bake uncovered for 40–45 minutes, until the top is golden and the center is set.

7. Let the casserole rest for 5–10 minutes before serving to allow it to firm up.

Notes

Ensure spinach is fully drained to prevent a watery texture.

For a smoother texture, you can substitute cottage cheese with ricotta.
