Description

Tuscan Garlic Chicken Bites & Sun-Dried Tomato Cajun Alfredo Pasta is a creamy, spicy pasta dish with bold Cajun flavors, juicy chicken bites, and sweet sun-dried tomatoes. Perfect for dinner lovers searching for hearty chicken pasta recipes, Tuscan Alfredo twists, or easy Cajun pasta dinners.


Ingredients

1 lb chicken breasts, cut into bite-size pieces

2 cloves garlic, minced

1 tbsp Tuscan seasoning

1 tsp Cajun seasoning (adjust to taste)

1 cup heavy cream

3/4 cup grated Parmesan cheese

1/2 cup sun-dried tomatoes, chopped

8 oz rotini pasta

1 tbsp olive oil

1 tbsp butter (plus more for sauce)

Salt and black pepper to taste

2 tbsp chopped fresh parsley

Parmesan shavings (optional for garnish)


Instructions

1. Season the chicken bites with Tuscan seasoning, salt, and black pepper.

2. Heat olive oil and butter in a cast iron skillet over medium-high heat. Sear the chicken until golden and fully cooked. Set aside.

3. In a large pot, boil rotini pasta in salted water until al dente. Drain and set aside.

4. In the same skillet, melt additional butter and sauté minced garlic until fragrant.

5. Stir in heavy cream, Cajun seasoning, and grated Parmesan. Let simmer until sauce thickens.

6. Add chopped sun-dried tomatoes to the sauce.

7. Return chicken and cooked pasta to the skillet. Toss well to coat everything in the sauce.

8. Garnish with chopped parsley and optional Parmesan shavings. Serve hot.

Notes

For extra creaminess, add a splash of reserved pasta water when mixing everything together.

To tone down the spice, use half the Cajun seasoning or opt for a mild blend.

Always let the chicken rest for a couple of minutes after searing to retain its juices before adding back to the sauce.
