Description

This creamy Vegan Almond Eggnog recipe is a festive dairy-free drink made with almond milk, coconut milk, maple syrup, and holiday spices. Perfect for Christmas or any cozy winter evening, it’s naturally sweetened, vegan, and easy to make. Enjoy it warm or chilled!


Ingredients

1 ½ cups almond milk

1 cup full-fat coconut milk

3 tablespoons maple syrup or 3 pitted Medjool dates

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 teaspoon vanilla extract

Pinch of salt

Optional: 1 to 2 ounces bourbon or dark rum


Instructions

1. Add almond milk, coconut milk, maple syrup or dates, cinnamon, nutmeg, vanilla extract, and salt to a high-speed blender.

2. Blend for 1 to 2 minutes until smooth and frothy. Make sure the dates are fully blended if using.

3. For a warm version, transfer the blended mixture to a saucepan and heat gently over medium-low, whisking often. Do not let it boil.

4. Optionally, strain the eggnog through a fine mesh sieve or nut milk bag for extra smoothness.

5. Serve warm or chilled in mugs or glasses. Garnish with cinnamon or nutmeg. Add optional bourbon or rum just before serving.

Notes

For a thicker texture, add ¼ cup more coconut milk or a few soaked cashews before blending.

To serve cold, chill for at least 1 hour and shake well before serving.

You can make this eggnog up to 3 days in advance—store in the fridge and shake before serving.
