Ingredients

1.5 lbs boneless chicken thighs

12 oz penne pasta

2 cups Velveeta cheese (cubed)

1.5 cups shredded mozzarella cheese

3 cloves garlic (minced)

1 cup heavy cream

2 tbsp butter

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

2 tbsp chopped fresh parsley (optional)


Instructions

1. Season chicken thighs with salt, pepper, and Italian seasoning.

2. In a large skillet over medium-high heat, melt 1 tbsp butter and sear chicken until golden and fully cooked. Remove and set aside.

3. In a large pot, boil penne pasta in salted water according to package instructions until al dente. Drain and set aside.

4. In the same skillet, add remaining butter and sauté minced garlic until fragrant.

5. Lower heat, pour in heavy cream and stir in Velveeta until smooth using a whisk.

6. Add mozzarella cheese and stir until fully melted into a creamy sauce.

7. Combine cooked penne into the sauce and mix well until coated.

8. Slice cooked chicken and layer over the cheesy pasta.

9. Garnish with fresh parsley and serve hot.

Notes

Velveeta melts best when added gradually and stirred constantly.

Always cook pasta al dente to avoid it getting mushy in the sauce.
