Description

This Warm Balsamic Chicken Tortellini Salad recipe is the perfect balance of grilled chicken, cheesy tortellini, crisp green beans, and a sweet tangy balsamic glaze. Ideal for a quick dinner, it’s a protein-packed, flavorful, and satisfying meal.


Ingredients

200 g chicken breasts

250 g cheese tortellini

150 g cherry tomatoes, halved

150 g green beans, trimmed

2 tablespoons fresh basil, chopped

3 tablespoons balsamic glaze

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon chili flakes (optional)


Instructions

1. Pat the chicken dry, season with salt, pepper, and a drizzle of olive oil. Sear in a hot grill pan or skillet until golden and cooked through, about 6-7 minutes per side.

2. Boil the tortellini in salted water per package instructions. Drain and drizzle with olive oil to prevent sticking.

3. Blanch green beans in boiling water for 2-3 minutes until crisp-tender, then transfer to an ice bath.

4. In a large bowl, combine halved cherry tomatoes, blanched green beans, tortellini, and sliced chicken.

5. Drizzle balsamic glaze over the salad. Toss gently, top with fresh basil and chili flakes, and serve warm.

Notes

You can substitute chicken with grilled shrimp, tofu, or steak for variation.

Make it vegetarian by skipping chicken and adding roasted veggies or chickpeas.

For extra creaminess, sprinkle Parmesan or crumble feta on top before serving.
