A hearty and comforting salad featuring tender chicken breast, cheese tortellini, cherry tomatoes, and fresh basil, all brought together with a sweet and tangy balsamic glaze. Perfect for a warm dinner that’s both satisfying and quick to prepare.
Ingredients
2 boneless, skinless chicken breasts
9 oz refrigerated cheese tortellini
1 cup cherry tomatoes, halved
1/3 cup fresh basil leaves
1/4 cup Parmesan shavings
2 tbsp balsamic glaze
2 tbsp olive oil
2 garlic cloves, minced
Salt and pepper to taste
1 tsp Italian seasoning (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions (about 3-4 minutes). Drain and set aside.
- Season chicken with salt, pepper, and Italian seasoning. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken 5–6 minutes per side, until golden and cooked through. Let rest, then slice.
- In the same skillet, add 1 tbsp olive oil and garlic. Sauté 30 seconds until fragrant.
- Return tortellini to the skillet and toss with garlic oil.
- In a large bowl, combine tortellini, sliced chicken, cherry tomatoes, and basil. Top with Parmesan.
- Drizzle balsamic glaze over the salad and gently toss. Serve warm.
