Ingredients
4 cups corn kernels (fresh, canned, or thawed frozen)
2 cups shredded white cheddar cheese
3 large eggs
1 cup heavy cream (or half-and-half)
4 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
1. Preheat oven to 350°F. Lightly grease a 9×13-inch baking dish.
2. In a large mixing bowl, whisk together eggs and heavy cream until fully combined.
3. Stir in the corn and 1 1/2 cups of the shredded white cheddar cheese.
4. Season the mixture with salt and pepper to taste.
5. Pour mixture into the prepared baking dish and smooth the top.
6. Sprinkle the remaining 1/2 cup of white cheddar over the surface.
7. Dot the top with small pieces of butter.
8. Bake uncovered for 35–40 minutes, or until golden brown and bubbling.
