Ingredients
2 chicken breasts
1/2 cup Greek yogurt
2 garlic cloves, minced
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1 tablespoon olive oil
8 oz rigatoni pasta
1/3 cup harissa paste
1/2 cup heavy cream
3/4 cup crumbled feta cheese
1 teaspoon lemon zest
1 bunch asparagus, trimmed
1/3 cup grated parmesan cheese
1 tablespoon olive oil
1/2 teaspoon salt
Instructions
1. Marinate chicken in yogurt, lemon juice, garlic, oregano, paprika, salt, and olive oil. Chill for 30 minutes or overnight.
2. Toss asparagus with olive oil, salt, and parmesan. Roast at 425°F for 15-20 minutes until crispy.
3. Grill marinated chicken 5-6 minutes per side on medium-high heat. Rest and slice.
4. Cook rigatoni in salted boiling water until al dente. Drain and set aside.
5. In a skillet, stir feta, cream, and harissa until smooth. Add lemon zest and salt. Blend if needed.
