Ingredients
1 large cucumber
2 cups cherry tomatoes
1/2 red onion
1 green bell pepper
1/2 cup Kalamata olives
4 oz feta cheese
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tbsp fresh lemon juice
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Wash and dry all the vegetables well. Slice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the bell pepper.
2. If you want a milder onion flavor, soak the sliced onion in cold water for 10 minutes, then drain well.
3. In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and black pepper.
4. In a large mixing bowl, combine the cucumber, tomatoes, red onion, bell pepper, and Kalamata olives.
5. Pour the dressing over the vegetables and toss gently to coat everything evenly.
6. Add the feta and gently fold it in, or leave it on top for a more traditional presentation.
7. Serve immediately or let the salad sit for 10 to 15 minutes before serving for even better flavor.
