Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
2 teaspoons vanilla extract
1/4 cup granulated sugar, for rolling
2 tablespoons pastel sprinkles, optional
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
3. In a large bowl, beat the softened butter and 1 1/2 cups sugar until light and fluffy.
4. Mix in the egg and vanilla extract until fully combined.
5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Scoop the dough into 1 1/2 tablespoon portions and roll into balls.
7. Roll each dough ball in the extra sugar and place on the prepared baking sheets.
8. Add a few sprinkles on top if using.
9. Bake for 9 to 11 minutes, until the edges are lightly golden and the centers are just set.
10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the dough after adding the flour or the cookies can turn out dense.
For thicker cookies, chill the dough balls for 20 to 30 minutes before baking.
Remove the cookies while the centers still look slightly soft so they stay tender after cooling.
