Description

These Bright and Fresh Simple Lemon Bars are a sunshine-filled easy recipe with a buttery crust and a smooth, tangy lemon filling. Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 teaspoon salt

1 cup unsalted butter, softened

4 large eggs

1 1/2 cups granulated sugar

1/4 cup all-purpose flour

2/3 cup fresh lemon juice

1 tablespoon lemon zest

2 tablespoons powdered sugar


Instructions

1. Preheat the oven to 350°F and line a 9×13-inch baking dish with parchment paper.

2. In a bowl, mix 2 cups all-purpose flour, 1/2 cup granulated sugar, 1/4 teaspoon salt, and softened butter until crumbly.

3. Press the crust mixture evenly into the prepared pan.

4. Bake the crust for 18 to 20 minutes until lightly golden at the edges.

5. In another bowl, whisk together the eggs, 1 1/2 cups granulated sugar, 1/4 cup all-purpose flour, fresh lemon juice, and lemon zest until smooth.

6. Pour the lemon filling over the warm prebaked crust.

7. Bake for 20 to 25 minutes until the filling is set.

8. Cool at room temperature, then chill in the refrigerator for at least 2 hours.

9. Lift from the pan, slice into bars, and dust with powdered sugar before serving.

Notes

Fresh lemon juice gives the cleanest and brightest flavor.

Chilling the bars fully makes them much easier to slice neatly.

Dust with powdered sugar right before serving for the prettiest finish.
