Ingredients

1 prepared chocolate cookie crust

8 oz cream cheese, softened

1 3.4 oz box instant vanilla pudding mix

1 cup cold milk

8 oz whipped topping, divided

1 tsp peppermint extract

3 to 4 drops pink food coloring

1/2 cup crushed candy canes

1/4 cup white chocolate shavings

4 to 6 mini candy canes for garnish


Instructions

1. Place the prepared chocolate cookie crust on a flat surface and set it aside.

2. In a large mixing bowl, beat the softened cream cheese until completely smooth.

3. Add the instant vanilla pudding mix and cold milk, then beat until the mixture thickens and becomes silky.

4. Mix in the peppermint extract and pink food coloring until evenly combined.

5. Fold in 6 ounces of the whipped topping gently with a spatula to keep the filling light and fluffy.

6. Spoon the filling into the prepared crust and smooth the top evenly.

7. Refrigerate the pie for at least 4 hours, or until fully chilled and set.

8. Before serving, spread or pipe the remaining whipped topping over the pie if desired.

9. Sprinkle with crushed candy canes and white chocolate shavings.

10. Garnish with mini candy canes, slice, and serve chilled.

Notes

Use softened cream cheese so the filling turns out smooth without lumps.

Add the crushed candy canes close to serving time so they stay crisp and do not melt into the topping.

For cleaner slices, chill the pie overnight and wipe the knife between cuts.
