Description

A hearty, comforting Tex-Mex casserole layered with seasoned ground beef, sweet corn, tangy tomatoes, sour cream, melty cheddar, and golden cornbread topping. It’s the perfect all-in-one dish for family dinners, potlucks, or an easy meal prep night.


Ingredients

1 lb ground beef

1 packet taco seasoning

1 (10 oz) can Rotel tomatoes (with green chilies)

1 cup corn kernels (canned or frozen, drained)

1 cup sour cream

1 cup shredded cheddar cheese

1 (8.5 oz) box cornbread mix (like Jiffy)

2 large eggs

1/3 cup milk

Fresh cilantro or parsley for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, cook ground beef over medium heat until browned. Drain fat.
  3. Add taco seasoning and 1/4 cup water. Simmer for 2-3 minutes.
  4. Stir in Rotel tomatoes and corn. Simmer for another 5 minutes.
  5. Transfer meat mixture to baking dish and spread evenly.
  6. Layer sour cream over beef mixture, then sprinkle cheddar cheese.
  7. In a bowl, mix cornbread, eggs, and milk until smooth. Pour over the casserole.
  8. Bake for 30-35 minutes or until cornbread is golden and cooked through.
  9. Let cool for 5 minutes. Garnish with chopped cilantro or parsley.
