Ingredients
1 lb ground beef
1 packet taco seasoning
1 (10 oz) can Rotel tomatoes (with green chilies)
1 cup corn kernels (canned or frozen, drained)
1 cup sour cream
1 cup shredded cheddar cheese
1 (8.5 oz) box cornbread mix (like Jiffy)
2 large eggs
1/3 cup milk
Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
 - In a skillet, cook ground beef over medium heat until browned. Drain fat.
 - Add taco seasoning and 1/4 cup water. Simmer for 2-3 minutes.
 - Stir in Rotel tomatoes and corn. Simmer for another 5 minutes.
 - Transfer meat mixture to baking dish and spread evenly.
 - Layer sour cream over beef mixture, then sprinkle cheddar cheese.
 - In a bowl, mix cornbread, eggs, and milk until smooth. Pour over the casserole.
 - Bake for 30-35 minutes or until cornbread is golden and cooked through.
 - Let cool for 5 minutes. Garnish with chopped cilantro or parsley.
