Ingredients
2 cups cooked shredded chicken
2 cups cooked rice
1 can black beans, drained and rinsed
1 cup corn kernels
1 can diced tomatoes with green chilies
1 small onion, diced
1 bell pepper, diced
1 packet taco seasoning
1/2 cup chicken broth
4 ounces cream cheese, softened
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
3 cups tortilla chips, lightly crushed
1 tablespoon olive oil
1 jalapeño, sliced, optional
2 tablespoons chopped fresh cilantro
1/2 cup sour cream, for serving
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Heat olive oil in a large skillet over medium heat, then cook the onion and bell pepper until softened.
3. Stir in the taco seasoning, shredded chicken, cooked rice, black beans, corn, diced tomatoes with green chilies, and chicken broth.
4. Mix in the cream cheese until melted and creamy.
5. Stir in 1 cup cheddar cheese and 1/2 cup Monterey Jack cheese.
6. Spread half of the mixture into the baking dish and top with half of the crushed tortilla chips.
7. Add the remaining filling, then top with the rest of the tortilla chips and remaining cheese.
8. Bake for 20 to 25 minutes until hot and bubbly.
9. Let the casserole rest for 5 to 10 minutes before serving.
10. Top with jalapeño, cilantro, and sour cream if desired.
Notes
Use rotisserie chicken to make this recipe even faster.
Add fresh tortilla chips after baking if you want more crunch on top.
