Ingredients
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons milk
1/2 cup unsalted butter, softened
2 1/2 cups powdered sugar
1 teaspoon peppermint extract
2 to 3 tablespoons milk
1/2 cup crushed peppermint candies
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the egg and vanilla extract, then beat until smooth and fully combined.
5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms. Add 2 tablespoons milk if the dough needs a little help coming together.
6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
7. Bake for 8 to 10 minutes, until the edges are set and the centers are still slightly soft.
8. Let the cookies cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely.
9. To make the filling, beat the butter until creamy, then mix in the powdered sugar, peppermint extract, and 2 to 3 tablespoons milk until fluffy and spreadable.
10. Pair cookies by size, spread filling onto the flat side of one cookie, and top with a second cookie.
11. Roll the exposed filling edges in crushed peppermint candies.
12. Chill for 15 to 20 minutes before serving for the neatest texture.
Notes
Chill the dough for 20 minutes if your kitchen is warm or the cookies start spreading too much.
Let the cookies cool completely before filling so the peppermint center stays thick and creamy.
Crush the peppermint candies finely for a cleaner finish and easier rolling around the cookie edges.
