Ingredients
1 box cherry gelatin, 3 oz
1 box lime gelatin, 3 oz
2 packets unflavored gelatin, 1/4 oz each
1 cup boiling water, divided
1/2 cup cold water, divided
1/2 cup sweetened condensed milk, divided
1 1/2 cups unsweetened shredded coconut
1 tsp neutral oil, for hands or scoop
Instructions
1. In a medium bowl, combine the cherry gelatin with 1 packet unflavored gelatin.
2. Pour in 1/2 cup boiling water and stir until fully dissolved.
3. Stir in 1/4 cup cold water and 1/4 cup sweetened condensed milk until smooth.
4. In a second bowl, combine the lime gelatin with the remaining packet of unflavored gelatin.
5. Pour in the remaining 1/2 cup boiling water and stir until fully dissolved.
6. Stir in the remaining 1/4 cup cold water and 1/4 cup sweetened condensed milk until smooth.
7. Pour each mixture into a shallow dish and refrigerate until thick and scoopable, about 1 1/2 to 2 hours.
8. Lightly grease your hands or a small scoop with the neutral oil.
9. Scoop small portions of each chilled gelatin mixture and roll them into bite-sized balls.
10. Roll each ball in the shredded coconut until fully coated.
11. Place the coated jello balls on a tray or plate and refrigerate for 30 minutes to firm up.
12. Serve chilled.
Notes
Chill the gelatin until it is firm enough to shape but not fully hard.
Lightly greased hands make rolling much easier and keep the mixture from sticking.
Store the finished jello balls in the refrigerator so they stay firm and fresh.
