Description

This Cinnamon Roll Poke Cake is the kind of easy dessert that tastes like a bakery treat without the extra work. Ingredients

1 box yellow cake mix

3 large eggs

1 cup milk

1/2 cup unsalted butter, melted

1 can sweetened condensed milk, 14 ounces

8 ounces cream cheese, softened

1/2 cup brown sugar

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups powdered sugar

3 tablespoons milk for glaze


Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.

2. In a large bowl, whisk together the yellow cake mix, eggs, 1 cup milk, and melted butter until smooth.

3. Pour the batter into the prepared baking dish and bake for 28 to 32 minutes, or until a toothpick inserted in the center comes out clean.

4. Let the cake cool for 5 minutes, then use the handle of a wooden spoon to poke holes all over the top.

5. Slowly pour the sweetened condensed milk over the warm cake, letting it soak into the holes.

6. In a medium bowl, beat the softened cream cheese with the brown sugar, cinnamon, vanilla extract, and salt until smooth.

7. Spoon and spread the cinnamon cream cheese mixture gently over the cake.

8. In a small bowl, whisk together the powdered sugar and 3 tablespoons milk until smooth and drizzle over the top.

9. Let the cake cool completely before slicing and serving.

Notes

Use room temperature cream cheese so the topping spreads smoothly.

Pour the sweetened condensed milk slowly so it soaks into the cake instead of pooling on top.

For even cleaner slices, chill the cake for 30 to 60 minutes before serving.
