Ingredients
8 oz cream cheese, softened
1 cup sharp cheddar cheese, shredded
1/2 cup dried cranberries, chopped
1/2 cup pistachios, chopped
2 green onions, finely sliced
1 tsp honey
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. In a medium bowl, mix the softened cream cheese, shredded cheddar, honey, garlic powder, salt, and black pepper until smooth.
2. Fold in half of the chopped cranberries, half of the chopped pistachios, and the sliced green onions.
3. Place the cheese mixture onto a sheet of plastic wrap and shape it into a log.
4. Wrap tightly and refrigerate for at least 1 hour, or until firm.
5. Spread the remaining chopped cranberries and pistachios on a plate.
6. Unwrap the chilled cheese log and roll it in the cranberry and pistachio mixture, pressing gently so the coating sticks.
7. Transfer to a serving plate and let it sit for 10 minutes before serving with crackers, crostini, or apple slices.
Notes
For the smoothest texture, make sure the cream cheese is fully softened before mixing.
Chill the log well before rolling so it holds its shape and the coating sticks better.
