Description

Cranberry Sausage & Stuffing Breakfast Casserole is a cozy, flavor-packed breakfast casserole loaded with savory sausage, fluffy stuffing, tart cranberries, eggs, and melty cheese for an easy recipe that fits holiday brunch, quick breakfast planning, and make-ahead breakfast ideas beautifully.


Ingredients

1 pound breakfast sausage

6 cups seasoned stuffing cubes

8 large eggs

2 cups whole milk

1 1/2 cups shredded mozzarella cheese

1 cup dried cranberries

1/2 cup diced onion

2 tablespoons butter

1 tablespoon fresh thyme

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.

2. Melt the butter in a large skillet over medium heat, then cook the sausage with the diced onion until browned and fully cooked. Drain any excess grease.

3. Spread the stuffing cubes evenly in the prepared baking dish.

4. Scatter the cooked sausage and onion mixture over the stuffing, then add the dried cranberries and shredded mozzarella cheese.

5. In a large bowl, whisk together the eggs, whole milk, thyme, salt, and black pepper until smooth.

6. Pour the egg mixture evenly over the casserole and gently press the stuffing down so it starts soaking up the custard.

7. Let the casserole rest for 10 to 15 minutes.

8. Bake for 40 to 45 minutes, or until the center is set and the top is golden brown.

Notes
