Description

Creamy Garlic Baby Potatoes are roasted until crispy and golden, then coated in a rich, garlicky cream sauce. This easy, flavor-packed side dish pairs perfectly with meats, fish, or even as a vegetarian main course.


Ingredients

1.5 lbs baby potatoes

2 tbsp olive oil

1 tsp salt

½ tsp black pepper

3 cloves garlic, minced

1 cup heavy cream

2 tbsp butter

¼ cup grated Parmesan cheese (optional)

2 tbsp chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C). Wash and dry the baby potatoes.
  2. Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30-35 minutes.
  3. In a skillet, melt butter over medium heat. Add minced garlic and cook until fragrant (about 1 minute).
  4. Stir in heavy cream and simmer for 3-4 minutes until slightly thickened.
  5. Add Parmesan cheese if using, and stir until melted. Adjust seasoning.
  6. Toss roasted potatoes in the garlic cream sauce until well coated.
  7. Garnish with chopped parsley and serve warm.
