Ingredients
1.5 lbs baby potatoes
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
3 cloves garlic, minced
1 cup heavy cream
2 tbsp butter
¼ cup grated Parmesan cheese (optional)
2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C). Wash and dry the baby potatoes.
- Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30-35 minutes.
- In a skillet, melt butter over medium heat. Add minced garlic and cook until fragrant (about 1 minute).
- Stir in heavy cream and simmer for 3-4 minutes until slightly thickened.
- Add Parmesan cheese if using, and stir until melted. Adjust seasoning.
- Toss roasted potatoes in the garlic cream sauce until well coated.
- Garnish with chopped parsley and serve warm.
