Ingredients

1 1/2 pounds baby potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon dried oregano

3/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped


Instructions

1. Preheat the oven to 425°F and line a baking sheet with parchment paper or lightly grease it.

2. Wash and dry the baby potatoes very well. Cut any larger potatoes in half so they cook evenly.

3. Place the potatoes in a large mixing bowl and add the olive oil, garlic powder, onion powder, paprika, dried oregano, salt, and black pepper.

4. Toss everything together until the potatoes are evenly coated with oil and seasoning.

5. Spread the potatoes on the prepared baking sheet in a single layer, placing cut sides down when possible.

6. Roast for 30 to 40 minutes, flipping once halfway through, until the potatoes are golden brown and fork tender.

7. Remove from the oven, transfer to a serving dish, and sprinkle with fresh parsley before serving.

Notes

Use potatoes that are similar in size so they roast evenly.

Dry the potatoes well before seasoning so they crisp instead of steam.

For extra flavor, add a light sprinkle of grated parmesan right after roasting.
