Description

This Delicious Sweet Hawaiian Crockpot Chicken is a sweet, savory, and easy dinner recipe that brings bold tropical flavor to the table with barely any effort. Tender chicken slow cooks in a rich pineapple and soy sauce mixture until perfectly juicy, making it a perfect easy dinner, family meal, crockpot chicken recipe, and comforting food idea for busy weeknights or simple dinner ideas.


Ingredients

2 pounds chicken thighs or chicken breasts

1 cup pineapple juice

1/2 cup brown sugar

1/2 cup soy sauce

3 cloves garlic, minced

1/4 cup ketchup

2 tablespoons cornstarch

2 tablespoons water

1 tablespoon sesame seeds

2 green onions, sliced


Instructions

1. Place the chicken in the crockpot in an even layer.

2. In a mixing bowl, whisk together the pineapple juice, brown sugar, soy sauce, garlic, and ketchup until fully combined.

3. Pour the sauce over the chicken, making sure all pieces are well coated.

4. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is tender and fully cooked.

5. In a small bowl, stir together the cornstarch and water to make a smooth slurry.

6. Add the slurry to the crockpot during the last 20 to 30 minutes of cooking and stir gently.

7. Let the sauce thicken, then spoon it over the chicken.

8. Garnish with sesame seeds and sliced green onions before serving.

Notes

Chicken thighs stay extra juicy and tender in the slow cooker, but chicken breasts also work well.

For more tropical flavor, add pineapple chunks during the last hour of cooking.

Serve over rice, noodles, or steamed vegetables to soak up all the sweet and savory sauce.
