Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar
1 large egg
2 teaspoons vanilla extract
1 cup pastel candy-coated chocolate pieces
1/3 cup pastel sprinkles
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Mix in the egg and vanilla extract until fully combined.
5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Fold in the pastel candy-coated chocolate pieces and pastel sprinkles.
7. Scoop the dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.
8. Press a few extra candy pieces on top of each dough ball if desired.
9. Bake for 9 to 11 minutes, until the edges are lightly set and the centers are still soft.
10. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
These cookies stay softer when they are slightly underbaked in the center.
If your kitchen is warm, chill the dough for 20 to 30 minutes before baking.
Adding a few candy pieces on top before baking makes the cookies look extra festive.
