Ingredients
1 bunch kale, stems removed and leaves chopped
1 tablespoon olive oil
2 tablespoons lemon juice
1/3 cup mayonnaise
1 teaspoon Dijon mustard
1 garlic clove, minced
1 teaspoon Worcestershire sauce
1/4 cup finely grated Parmesan cheese, plus more for serving
2 cups croutons
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Wash and dry the kale well, remove the tough stems, and chop the leaves into bite-sized pieces.
2. Place the kale in a large bowl and drizzle with the olive oil and 1 tablespoon of the lemon juice. Massage the kale with your hands for 1 to 2 minutes until softened.
3. In a small bowl, whisk together the mayonnaise, remaining 1 tablespoon lemon juice, Dijon mustard, garlic, Worcestershire sauce, Parmesan, salt, and black pepper until smooth.
4. Pour the dressing over the kale and toss well until all the leaves are evenly coated.
5. Add the croutons and toss gently.
6. Top with extra Parmesan and serve immediately.
