Ingredients
1 can chickpeas, drained and rinsed
1/4 cup tahini
2 tablespoons fresh lemon juice
1 small garlic clove
2 tablespoons extra virgin olive oil, plus more for serving
2 to 4 tablespoons ice water
1/2 teaspoon ground cumin
1/2 teaspoon salt, or to taste
1/4 teaspoon paprika, for serving
1 tablespoon chopped fresh parsley, for serving
1 tablespoon whole chickpeas, for garnish, optional
Instructions
1. Add the tahini and fresh lemon juice to a food processor and blend for 30 seconds until smooth and slightly fluffy.
2. Add the garlic, olive oil, cumin, and salt, then blend again until well combined.
3. Add the chickpeas and process until the mixture becomes thick and mostly smooth.
4. Add the ice water one tablespoon at a time while blending until the hummus turns light, creamy, and silky.
5. Taste and adjust with more salt or lemon juice if needed.
6. Spoon into a bowl, create swirls with the back of a spoon, and top with olive oil, paprika, parsley, and whole chickpeas before serving.
Notes
Keep blending longer than you think for the smoothest texture.
Use ice water, not regular water, to help make the hummus lighter and creamier.
