These Easy Lasagna Roll-Ups are a fun, simplified twist on the classic lasagna. Each noodle is filled with a savory mix of meat and cheese, rolled up, topped with marinara, and baked to cheesy perfection. It’s a comforting, satisfying dinner that’s easy enough for weeknights and special enough for guests.
Ingredients
12 lasagna noodles
1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1 pound ground beef
2 cups marinara sauce (divided)
1 cup ricotta cheese
1 large egg
1/2 cup grated Parmesan cheese (divided)
1 1/2 cups shredded mozzarella cheese
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment.
- In a skillet, heat olive oil. Sauté onion and garlic until fragrant. Add ground beef and cook until browned. Drain fat.
- Stir 1 cup of marinara into the beef. Let cool slightly.
- In a bowl, mix ricotta, egg, 1/4 cup Parmesan, salt, and pepper.
- Spread cheese mixture on each noodle. Top with meat sauce. Roll tightly.
- Spread remaining marinara in a baking dish. Place roll-ups seam-side down.
- Top with remaining sauce, mozzarella, and Parmesan.
- Cover with foil and bake 20 minutes. Uncover and bake another 10 minutes.
- Garnish with parsley and serve hot.
