Description

These Easy Lasagna Roll-Ups are a fun, simplified twist on the classic lasagna. Each noodle is filled with a savory mix of meat and cheese, rolled up, topped with marinara, and baked to cheesy perfection. It’s a comforting, satisfying dinner that’s easy enough for weeknights and special enough for guests.


Ingredients

12 lasagna noodles

1 tablespoon olive oil

1 small onion, chopped

2 garlic cloves, minced

1 pound ground beef

2 cups marinara sauce (divided)

1 cup ricotta cheese

1 large egg

1/2 cup grated Parmesan cheese (divided)

1 1/2 cups shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment.
  3. In a skillet, heat olive oil. Sauté onion and garlic until fragrant. Add ground beef and cook until browned. Drain fat.
  4. Stir 1 cup of marinara into the beef. Let cool slightly.
  5. In a bowl, mix ricotta, egg, 1/4 cup Parmesan, salt, and pepper.
  6. Spread cheese mixture on each noodle. Top with meat sauce. Roll tightly.
  7. Spread remaining marinara in a baking dish. Place roll-ups seam-side down.
  8. Top with remaining sauce, mozzarella, and Parmesan.
  9. Cover with foil and bake 20 minutes. Uncover and bake another 10 minutes.
  10. Garnish with parsley and serve hot.
