Description
This easy sheet pan sausage with vegetables is a quick dinner packed with smoky sausage, roasted potatoes, broccoli, and sweet peppers all cooked on one pan. Ingredients
1 lb smoked sausage, sliced into rounds
1 lb baby potatoes, halved
2 cups broccoli florets
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small red onion, sliced into wedges
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped
Instructions
1. Preheat the oven to 425°F.
2. Slice the smoked sausage, halve the baby potatoes, chop the broccoli, cut the bell peppers, and slice the red onion.
3. Add the sausage, potatoes, broccoli, peppers, and onion to a large mixing bowl.
4. Drizzle with olive oil and season with garlic powder, Italian seasoning, paprika, salt, and black pepper.
5. Toss everything well so the ingredients are evenly coated.
6. Spread the mixture onto a large sheet pan in a single layer.
7. Roast for 30 to 35 minutes, flipping halfway through, until the potatoes are tender and the vegetables are lightly browned.
8. Remove from the oven, sprinkle with fresh parsley, and serve hot.
Notes
Cut the potatoes into small, even pieces so they finish cooking at the same time as the other ingredients.
Do not overcrowd the pan or the vegetables may steam instead of roast.
For extra browning, place the pan under the broiler for 1 to 2 minutes at the end.
