Description

A light and elegant dessert made with fresh raspberries and whipped cream for a cloud-like texture. It’s fruity, smooth, and just sweet enough — perfect for summer entertaining or a romantic finish to dinner.


Ingredients

2 cups fresh raspberries (plus extra for topping)

1 cup heavy whipping cream

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon powdered gelatin

2 tablespoons cold water

Powdered sugar (for dusting)


Instructions

  1. Blend raspberries until smooth and strain to remove seeds.
  2. In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes. Microwave for 10–15 seconds to dissolve.
  3. Stir granulated sugar and vanilla into raspberry puree. Add gelatin mixture and mix well.
  4. Whip cream to soft peaks.
  5. Gently fold raspberry mixture into whipped cream until fully incorporated.
  6. Spoon into dessert cups or molds. Chill for at least 4 hours or until set.
  7. Top with whipped cream, fresh raspberries, and powdered sugar before serving.
