A light and elegant dessert made with fresh raspberries and whipped cream for a cloud-like texture. It’s fruity, smooth, and just sweet enough — perfect for summer entertaining or a romantic finish to dinner.
Ingredients
2 cups fresh raspberries (plus extra for topping)
1 cup heavy whipping cream
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon powdered gelatin
2 tablespoons cold water
Powdered sugar (for dusting)
Instructions
- Blend raspberries until smooth and strain to remove seeds.
- In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes. Microwave for 10–15 seconds to dissolve.
- Stir granulated sugar and vanilla into raspberry puree. Add gelatin mixture and mix well.
- Whip cream to soft peaks.
- Gently fold raspberry mixture into whipped cream until fully incorporated.
- Spoon into dessert cups or molds. Chill for at least 4 hours or until set.
- Top with whipped cream, fresh raspberries, and powdered sugar before serving.
