Description

Garlic Parmesan Chicken and Potatoes is a one-pan dinner packed with crispy chicken thighs and golden roasted baby potatoes, all tossed in a flavorful garlic butter sauce and topped with melted Parmesan. It’s perfect for cozy weeknights or casual entertaining.


Ingredients

6 bone-in, skin-on chicken thighs

1.5 lbs baby potatoes, halved if large

4 cloves garlic, minced

4 tbsp unsalted butter, melted

2 tbsp olive oil

1 tsp dried Italian herbs (mix of oregano, thyme, parsley)

Salt and black pepper to taste

1/2 cup freshly grated Parmesan cheese

2 tbsp chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry and halve any large potatoes.
  2. In a bowl, mix melted butter, garlic, olive oil, Italian herbs, salt, and pepper.
  3. Toss chicken and potatoes with garlic butter mixture to coat thoroughly.
  4. Arrange in a single layer on a baking sheet, potatoes cut-side down.
  5. Bake for 35-40 minutes or until chicken reaches 165°F and potatoes are tender.
  6. Sprinkle Parmesan over everything in the last 5 minutes of baking. Optional: broil for 2-3 minutes for a golden top.
  7. Let rest for 5 minutes, then garnish with fresh parsley and serve.
