Ingredients
6 bone-in, skin-on chicken thighs
1.5 lbs baby potatoes, halved if large
4 cloves garlic, minced
4 tbsp unsalted butter, melted
2 tbsp olive oil
1 tsp dried Italian herbs (mix of oregano, thyme, parsley)
Salt and black pepper to taste
1/2 cup freshly grated Parmesan cheese
2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Pat chicken thighs dry and halve any large potatoes.
- In a bowl, mix melted butter, garlic, olive oil, Italian herbs, salt, and pepper.
- Toss chicken and potatoes with garlic butter mixture to coat thoroughly.
- Arrange in a single layer on a baking sheet, potatoes cut-side down.
- Bake for 35-40 minutes or until chicken reaches 165°F and potatoes are tender.
- Sprinkle Parmesan over everything in the last 5 minutes of baking. Optional: broil for 2-3 minutes for a golden top.
- Let rest for 5 minutes, then garnish with fresh parsley and serve.
