Ingredients
1 lb ground turkey
3 cups cooked white rice
1 tbsp olive oil
3 cloves garlic, minced
3 tbsp soy sauce
1 tsp sesame oil
1 tbsp honey
1 tbsp rice vinegar
1 tsp sriracha
1 cucumber, thinly sliced
1 cup shredded carrots
1 avocado, sliced
2 green onions, sliced
1 tsp sesame seeds
1/3 cup mayonnaise
1 tbsp sriracha for sauce
1 tsp rice vinegar for sauce
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Cook the white rice according to package directions until fluffy, then set aside and keep warm.
2. In a small bowl, stir together the mayonnaise, 1 tablespoon sriracha, and 1 teaspoon rice vinegar to make the creamy spicy sauce.
3. Heat olive oil in a large skillet over medium heat.
4. Add the ground turkey and cook, breaking it apart, until browned and fully cooked.
5. Stir in the garlic, soy sauce, sesame oil, honey, 1 tablespoon rice vinegar, 1 teaspoon sriracha, salt, and black pepper.
6. Cook for 2 to 3 more minutes until the turkey is glossy and well seasoned.
7. Divide the rice among serving bowls.
8. Top each bowl with the cooked ground turkey, sliced cucumber, shredded carrots, and avocado.
9. Drizzle with the spicy sauce and finish with green onions and sesame seeds.
10. Serve immediately.
