Description

These High Protein Egg Bites are a quick breakfast packed with protein, flavor, and colorful veggies, making them perfect for meal prep, easy breakfast ideas, healthy snacks, and even light dinner ideas when you need a simple, satisfying recipe. Ingredients

6 large eggs

1 cup cottage cheese

1/2 cup shredded cheddar cheese

1 cup fresh spinach, finely chopped

1/3 cup red bell pepper, diced

2 green onions, sliced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 tablespoon olive oil or nonstick spray for the pan


Instructions

1. Preheat the oven to 350°F and grease a muffin tin well with olive oil or nonstick spray.

2. Add the eggs, cottage cheese, salt, black pepper, and garlic powder to a blender, then blend until smooth.

3. Finely chop the spinach, dice the red bell pepper, and slice the green onions.

4. Divide the spinach, bell pepper, green onions, and shredded cheddar cheese evenly among the muffin cups.

5. Pour the egg mixture into each muffin cup, filling each about three-quarters full.

6. Bake for 18 to 22 minutes, or until the centers are set and the tops are lightly golden.

7. Let the egg bites cool in the pan for 5 minutes, then carefully remove and serve.

Notes

Blend the egg mixture well for the softest and fluffiest texture.

Chop the vegetables small so the egg bites hold together better and bake evenly.

Let them cool slightly before removing from the pan to help them keep their shape.
