Description

Ingredients

1 cup egg whites

1 cup cottage cheese

1/2 cup shredded mozzarella cheese

1/4 cup red bell pepper, finely diced

1/4 cup green bell pepper, finely diced

2 tablespoons green onions, sliced

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Preheat the oven to 350°F and lightly grease a silicone muffin pan or standard muffin tin with cooking spray.

2. Add the egg whites and cottage cheese to a blender and blend until completely smooth.

3. Pour the mixture into a bowl and stir in the mozzarella cheese, garlic powder, salt, and black pepper.

4. Fold in the red bell pepper, green bell pepper, and green onions until evenly combined.

5. Spoon the mixture into the prepared muffin wells, filling each about three-quarters full.

6. Bake for 22 to 26 minutes, or until the tops are lightly golden and the centers are set.

7. Let the egg bites cool in the pan for 5 minutes before removing.

8. Serve warm, or cool completely and store for later.

Notes

Blend the cottage cheese well so the texture turns out smooth and fluffy.

Use a silicone muffin pan for the easiest release and the cleanest shape.

Do not overbake or the egg bites can become rubbery instead of tender.
