Description

This Homemade Lemon Curd is bright, silky, buttery, and packed with fresh citrus flavor, making it an easy recipe for dessert lovers, brunch spreads, healthy snack pairings, breakfast ideas, and quick sweet food ideas. Whether you spoon it over toast, swirl it into yogurt, layer it into cakes, or serve it with scones, this easy homemade lemon curd brings sunny flavor to any table.

Ingredients

1 cup fresh lemon juice

1 tablespoon lemon zest

1 cup granulated sugar

3 large eggs

6 tablespoons unsalted butter

1 pinch salt

Instructions

1. Zest the lemons first, then juice them so everything is ready before cooking.

2. In a medium saucepan, whisk together the fresh lemon juice, lemon zest, granulated sugar, eggs, and salt until smooth.

3. Set the saucepan over low to medium-low heat and cook, whisking constantly, until the mixture thickens and coats the back of a spoon.

4. Remove the pan from the heat and whisk in the unsalted butter, one tablespoon at a time, until fully melted and glossy.

5. Strain the lemon curd through a fine mesh strainer into a bowl or jar for an extra smooth texture.

6. Let it cool slightly, then transfer to an airtight container and chill until fully set.

Notes

Keep the heat gentle so the eggs thicken smoothly without scrambling.

Straining the curd gives it the silkiest texture, especially if you want a very smooth finish.

Fresh lemon juice gives the best flavor and makes the curd taste much brighter than bottled juice.
