1 large egg, beaten
1 tablespoon water
1 to 2 tablespoons coarse pretzel salt
Instructions
1. In a large mixing bowl, combine 1 1/2 cups warm water, active dry yeast, and granulated sugar. Let it sit for 5 minutes until foamy.
2. Add the flour, salt, and melted butter. Mix until a shaggy dough forms, then knead for 5 to 7 minutes until smooth and elastic.
3. Transfer the dough to a lightly greased bowl, cover, and let it rise for about 1 hour or until doubled in size.
4. Preheat the oven to 425°F and line a baking sheet with parchment paper.
5. Turn the dough onto a clean surface and divide it into 6 portions. Roll each portion into a rope, then cut into bite-sized pieces.
6. Bring 9 cups of water to a gentle boil in a large pot and carefully stir in the baking soda.
7. Drop the dough bites into the baking soda bath in small batches for 20 to 30 seconds.
8. Remove the bites with a slotted spoon and place them on the prepared baking sheet.
