Ingredients

2 tablespoons green tea leaves

2 cups water

1 cup cold water

2 cups whole milk

1/8 teaspoon baking soda

1 pinch salt

2 to 3 tablespoons sugar

1/4 teaspoon crushed cardamom

1 tablespoon crushed pistachios

1 teaspoon dried rose petals


Instructions

1. Add the green tea leaves, 2 cups water, baking soda, and salt to a medium saucepan. Bring to a boil over medium-high heat.

2. Lower the heat and simmer for 8 to 10 minutes until the tea base deepens in color.

3. Pour in 1 cup cold water and continue simmering for another 8 to 10 minutes, stirring or whisking occasionally.

4. Strain the tea into a clean saucepan using a fine mesh strainer.

5. Add the milk and place the saucepan over low to medium heat.

6. Stir in the sugar and crushed cardamom, then whisk gently until the chai becomes frothy and warm.

7. Simmer for 3 to 5 minutes without boiling hard.

8. Pour into mugs and garnish with crushed pistachios and dried rose petals before serving.

Notes

Use whole milk for the creamiest texture and best color.

Do not skip the baking soda because it helps develop the signature pink hue.

Whisking during the final stage helps create the light frothy top that makes this chai extra special.
