Description

Loaded Chicken Avocado Sandwich is the kind of quick lunch or easy dinner that feels extra satisfying with every bite. Made with juicy chicken, creamy avocado, melty cheese, fresh tomato, and crisp golden bread, this easy recipe is packed with bold flavor and hearty texture. Ingredients

2 cups cooked shredded chicken

1 large avocado

4 slices mozzarella or provolone cheese

4 slices thick sandwich bread or sourdough

1 medium tomato, diced

2 tablespoons finely chopped red onion

1 tablespoon chopped fresh parsley or cilantro

2 tablespoons butter or olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 teaspoon lime juice or lemon juice


Instructions

1. In a small bowl, combine the diced tomato, chopped red onion, parsley or cilantro, and a small pinch of salt and pepper. Stir and set aside.

2. In another bowl, mash the avocado with the lime juice and a small pinch of salt until mostly smooth but still slightly chunky.

3. Place the cooked chicken in a skillet over low to medium heat. Season with garlic powder, a little salt, and black pepper, then warm until heated through.

4. Lay out the bread slices and spread the mashed avocado evenly over one side of each slice.

5. Add 1 slice of cheese to two bread slices, then divide the warm chicken on top.

6. Spoon the tomato mixture over the chicken, then top with the remaining cheese slices.

7. Close the sandwiches with the remaining bread slices. Lightly butter the outsides or brush with olive oil.

8. Toast the sandwiches in a skillet over medium heat for 3 to 4 minutes per side, or until golden brown and the cheese is melted.

9. Let rest for 1 minute, then slice and serve warm.

Notes

Rotisserie chicken works very well here and saves time.

Use sturdy bread so the sandwich holds all the filling without falling apart.

Add bacon, jalapeños, or chipotle mayo if you want even more flavor.
