Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 medium onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
1/4 cup all-purpose flour
6 cups chicken broth
1 cup whole milk
1 1/2 pounds boneless skinless chicken breasts or chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried parsley
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup whole milk
4 tablespoons melted butter
2 tablespoons chopped fresh parsley or chives for garnish
Instructions
1. Heat the olive oil and butter in a large Dutch oven or heavy pot over medium heat. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.
2. Stir in the garlic and cook for 30 seconds until fragrant.
3. Sprinkle in 1/4 cup flour and stir well to coat the vegetables. Cook for 1 minute.
4. Slowly pour in the chicken broth while stirring, then add 1 cup milk, salt, black pepper, thyme, and dried parsley.
5. Add the chicken to the pot and bring the mixture to a gentle simmer. Cook for 15 to 20 minutes, or until the chicken is fully cooked.
6. Remove the chicken from the pot, shred it with two forks, and return it to the broth.
7. In a medium bowl, stir together 2 cups flour, baking powder, salt, and black pepper.
8. Add 3/4 cup milk and melted butter to the dry ingredients, then mix just until a soft dough forms.
9. Drop spoonfuls of dumpling dough over the simmering soup.
10. Cover the pot tightly with a lid and let the dumplings steam for 15 minutes without lifting the lid.
11. Check that the dumplings are cooked through in the center.
12. Ladle into bowls, garnish with fresh parsley or chives, and serve hot.
Notes
Use chicken thighs for a richer flavor and extra tender texture.
Do not overmix the dumpling dough or the dumplings may turn heavy.
Keep the lid closed while the dumplings steam so they stay fluffy and cook evenly.
