Description

This Slow Cooker BBQ Pulled Beef is a rich, smoky, easy dinner packed with tender shredded beef and bold barbecue flavor. It is perfect for busy weeknights, casual dinner ideas, game day spreads, and easy meal prep, making it one of those comfort food recipes you will want to make again and again.


Ingredients

3 pounds beef chuck roast

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon chili powder

1 yellow onion, sliced

3 cloves garlic, minced

1 1/2 cups BBQ sauce

1/2 cup beef broth

2 tablespoons Worcestershire sauce

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

2 tablespoons chopped fresh parsley or cilantro for garnish

6 sandwich buns, optional for serving


Instructions

1. Pat the beef chuck roast dry with paper towels and trim any large pieces of excess fat.

2. Season the roast all over with salt, black pepper, smoked paprika, and chili powder.

3. Heat olive oil in a skillet over medium-high heat and sear the roast for 2 to 3 minutes per side until browned. This step is optional but adds more flavor.

4. Place the sliced onion and minced garlic in the bottom of the slow cooker.

5. In a bowl, stir together the BBQ sauce, beef broth, Worcestershire sauce, apple cider vinegar, and brown sugar.

6. Set the beef roast on top of the onions in the slow cooker.

7. Pour the prepared sauce over the beef.

8. Cover and cook on low for 8 to 9 hours or on high for 5 to 6 hours, until the beef is very tender.

9. Remove the beef from the slow cooker and shred it with two forks.

10. Return the shredded beef to the slow cooker and stir it into the sauce.

11. Let it sit on warm for 15 to 20 minutes so the beef absorbs more flavor.

12. Serve hot on buns, over mashed potatoes, over rice, or however you like.

Notes

Chuck roast gives the best tender, juicy texture for shredding.

Searing the beef first adds a deeper savory flavor but is not required.

Keep some of the cooking liquid with the beef when storing so it stays moist during reheating.
