This slow cooker Tuscan chicken is a rich, creamy easy dinner packed with tender chicken, garlic, sun dried tomatoes, and spinach in every bite. Ingredients
2 pounds boneless skinless chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon Italian seasoning
1 tablespoon olive oil
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
3/4 cup chopped sun dried tomatoes
3 cups fresh spinach
1 tablespoon cornstarch
2 tablespoons cold water
Instructions
1. Pat the chicken thighs dry and season them with salt, black pepper, paprika, onion powder, and Italian seasoning.
2. Place the seasoned chicken thighs in the slow cooker in an even layer.
3. In a bowl, whisk together the olive oil, garlic, chicken broth, heavy cream, Parmesan cheese, and sun dried tomatoes.
4. Pour the sauce mixture over the chicken.
5. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is tender and fully cooked.
6. Stir in the fresh spinach during the last 15 to 20 minutes of cooking.
7. If you want a thicker sauce, mix the cornstarch and cold water in a small bowl, then stir it into the slow cooker.
8. Cook for a few more minutes until the sauce thickens slightly.
9. Serve hot with pasta, rice, mashed potatoes, or crusty bread.
Notes
Chicken thighs stay more tender than chicken breasts in the slow cooker, so they are the best choice for a creamy sauce like this.
Add the spinach near the end so it stays bright and soft instead of overcooking.
For extra flavor, top each serving with more Parmesan and a little fresh basil or parsley.
