2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. In a medium bowl, mix the flour, granulated sugar, and salt.

4. Press about two-thirds of the mixture firmly into the bottom of the prepared pan.

6. Spread the peach mixture evenly over the crust.
7. Add the brown sugar and cinnamon to the remaining crumb mixture and stir until combined.
8. Sprinkle the cinnamon streusel evenly over the peach layer.
9. Bake for 38 to 45 minutes, until the top is golden and the filling is bubbling.
10. Cool completely before slicing into bars.
