Description

Sweet and Creamy Lemon Bar Truffles are a bright, luscious no-bake dessert with a creamy lemon center and a smooth white chocolate shell. Ingredients

36 lemon sandwich cookies, crushed

8 oz cream cheese, softened

1 cup powdered sugar

1 tbsp fresh lemon zest

2 tbsp fresh lemon juice

1 tsp vanilla extract

12 oz white chocolate, melted

2 tsp coconut oil

2 tbsp powdered sugar, for dusting

1 tsp lemon zest, for garnish


Instructions

1. Crush the lemon sandwich cookies into very fine crumbs using a food processor or a sealed bag and rolling pin.

2. In a mixing bowl, combine the cookie crumbs, softened cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract until smooth and fully blended.

3. Cover the bowl and chill the mixture for 30 to 45 minutes until firm enough to scoop.

4. Scoop and roll the mixture into 1-inch balls, then place them on a parchment-lined tray.

5. Chill the rolled truffles for 20 to 30 minutes so they become firm.

6. Melt the white chocolate and stir in the coconut oil until smooth.

7. Dip each chilled truffle into the melted white chocolate, letting the excess drip off before placing it back on the tray.

8. Sprinkle with lemon zest while the coating is still soft.

9. Once set, dust lightly with powdered sugar and refrigerate until ready to serve.

Notes

Keep the filling well chilled so the truffles are easier to roll and dip.

Use fresh lemon zest and juice for the cleanest, brightest citrus flavor.

If the white chocolate feels too thick, add a little more coconut oil to loosen it.
