Ingredients
2 medium sweet potatoes
4 large eggs
6 slices bacon
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Preheat the oven to 400°F.
2. Wash and dry the sweet potatoes, then prick them lightly with a fork.
3. Place the sweet potatoes on a lined baking sheet and roast for 40 to 50 minutes until tender.
4. While the sweet potatoes roast, cook the bacon in a skillet until crisp, then chop it into small pieces.
5. Remove the sweet potatoes from the oven and let them cool slightly.
6. Slice each sweet potato in half lengthwise and gently press the ends to open the center.
7. Scoop out a small amount of the flesh from each half to create space for the eggs.
8. Drizzle the centers with olive oil and season with salt and black pepper.
9. Crack one egg into each sweet potato half.
10. Sprinkle the chopped bacon over the tops.
11. Return the boats to the oven and bake for 10 to 15 minutes until the egg whites are set and the yolks are cooked to your liking.
12. Finish with chopped fresh parsley and serve warm.
Notes
Use large sweet potatoes if possible so the eggs fit more easily.
Crack each egg into a small bowl first if you want better control when filling the boats.
For extra flavor, add shredded cheese or sliced green onions before the final bake.
