Description

Ultimate Cowboy Caviar Dip is a fresh, colorful, flavor-packed appetizer that comes together fast with black-eyed peas, black beans, corn, tomatoes, avocado, and a zesty homemade dressing. Ingredients

1 can black-eyed peas, drained and rinsed

1 can black beans, drained and rinsed

1 cup sweet corn

2 Roma tomatoes, diced

1/2 red onion, finely diced

1 bell pepper, diced

1 jalapeño, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

3 tablespoons lime juice

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 garlic clove, minced

1 teaspoon honey

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

tortilla chips for serving


Instructions

1. Rinse and drain the black-eyed peas, black beans, and corn well, then add them to a large mixing bowl.

2. Dice the tomatoes, red onion, bell pepper, jalapeño, and cilantro, then add them to the bowl.

3. In a small bowl, whisk together the lime juice, olive oil, red wine vinegar, garlic, honey, chili powder, cumin, salt, and black pepper.

4. Pour the dressing over the bean mixture and stir until everything is evenly coated.

5. Fold in the diced avocado gently so it stays in chunks.

6. Chill the dip for 20 to 30 minutes for the best flavor.

7. Serve with tortilla chips or use as a topping for tacos, grilled meats, or bowls.

Notes

Use well-drained beans and corn so the dip stays fresh and not watery.

Add the avocado just before serving if you are making it ahead.

Taste before serving and add extra lime juice or salt if you want a brighter finish.
